Sweet Potato Quesadillas

I’m cheating a little bit with this post: Will has not tried this recipe.  However, sweet potatoes are one of his favorite foods, so I have no doubt that he would have loved these quesadillas.  I did test them on an adult guinea pig with excellent results!

This recipe was inspired by the burritos in the Vegetarian Cooking for Dummies cookbook.  I liked the combination of sweet potatoes and black beans, but the recipe as a whole was missing something (as were most of the recipes I tried from that cookbook).  So I took the burrito, added some spices, turned it into a quesadilla, and loved every bite!  I like mine topped with sour cream and a homemade guacamole.  Delicious!!

Total prep and cook time: 15 minutes.  Approximate cost: $1.75

Sweet Potato Quesadillas

  • 1 large sweet potato
  • 2 T olive oil, divided
  • 1/3 cup black beans, rinsed and drained
  • 1/2 tsp cumin
  • 1 tsp cilantro
  • 1/2 cup cheddar cheese, shredded
  • 4 flour tortillas

Stab sweet potato with fork several times and cook in microwave, about 10 minutes, or until soft.  Mash and spread onto two tortillas.  While sweet potato is baking, cook black beans over medium-high heat with 1 T olive oil, cumin and cilantro until heated through.  Spread the beans on top of the mashed sweet potato.  Cover the beans with cheddar cheese and place the other tortilla on top.

Heat 1/2 T oil in a medium pan to medium-high, or on a griddle.  Place quesadilla in the pan for about 2 minutes, or until the bottom is slightly browned.  Flip the quesadilla and brown the other side.  Repeat with the remaining 1/2 T oil and second quesadilla.
