Bean and Bulgur Taco Salad

I love taco salad.  Where else can you put chips on a salad and call sour cream and salsa dressing??  And something about ground beef just screams “Make me a taco!”   This is one of the (many) things I miss about not eating meat.  I’ve spent much time trying to find a cheap, meatless equivalent to the taco salad.  After a failed experiment with black bean-bulgur burgers, the leftovers turned into a fabulous taco “meat” that was a huge hit with Will and his meat-eating grandparents!  I tweaked the burger recipe significantly and added a homemade taco seasoning recipe that I love. 

This can be made up to four days in advance and refrigerated.

Prep and cook time: 30 minutes. Cost per serving: approximately $2 with fixings

Taco “Meat”

  • 1/2 cup chopped onion
  • 2 celery stalks, finely chopped
  • 1/2 green pepper, thinly sliced 
  • Taco seasoning (see recipe for homemade below)
  • 1/2 cup bulgur
  • 1 cup water
  • 1 can black beans

Saute onion in a medium sauce pan with a small amount of oil. Once browned, add celery, green pepper, and taco seasoning,  and cook for an additional 5 minutes. Add bulgur and water and cook, covered, over low heat until water is absorbed, 15 minutes.

While the bulgur is cooking, rinse and drain the black beans. Gently mash with fork, just enough to soften, allowing them to hold most of their shape.

When bulgur is cooked, combine with black beans and stir together. Place back over low heat until mixture is heated through. Serve over lettuce and top with your favorite taco fixings.

Serves 6

Taco Seasoning

  • 2 tsp chili powder
  • 1 1/2 tsp paprika
  • 1 1/2 tsp cumin
  • 1 tsp onion powder
  • 3/4 tsp garlic salt
  • 1/2 tsp salt
  • Dash cayenne

Combine all ingredients. Use instead of 1 package taco seasoning mix. If not using entire amount, store tightly covered in a cool dry place.
