Spaghetti with Vegetarian Sausage

This is a super easy dinner, and substitutions can be made to whatever vegetables your family likes most. The following ingredients are what I had on hand, and according to Will it was better than excellent!

Total prep and cook time is under 30 minutes. The cost for this meal is around $3.50, without the sausages it’s around $2.50.

Spaghetti with Vegetarian Sausage

  • 1 T olive oil
  • ½ onion, chopped
  • 1 carrot, chopped
  • 1 stalk celery, chopped
  • ½ zucchini, chopped
  • 2 cloves garlic, minced or chopped
  • ½ palmful oregano
  • 1 palmful parsley
  • ½ palmful basil
  • Salt and Pepper to taste
  • splash dry white wine
  • 1 can (15 oz) tomato sauce
  • 1/2 cup black beans
  • 4 links vegetarian sausage, sliced
  • Spaghetti noodles
  • Parmesan

Saute vegetables (except zucchini) and garlic in olive oil until nearly tender. Add zucchini and herbs and cook until vegetables are tender. Stir in a splash of white wine and cook another minute. Stir in tomato sauce, beans, and sausages, and simmer for 15 minutes.

Cook noodles. When noodles are al dente, toss with sauce and top with Parmesan.

Serves 2-3

    • I use Morning Star products. I fell in love with their black bean burgers and have tried a few other of their “meats” since, all with good results. I accidentally grabbed the breakfast sausages, but next time will use the Italian sausgae.
