Curried Lentils

During the Great Pantry Experiment, I’ve been dreading one item: lentils. Tonight, they were about the only thing left. Since I have been craving curry, I tried a lentil-based yellow curry dish and, to my surprise, it was a huge hit. Will gave it two emphatic thumbs up and said it was perfect! I thought it needed a few modifications, and the recipe that follows is what I intend for the next time. Shrimp would be delicious in this dish, adding it in the last step with the peas.

Prep and cook time is about 40 minutes. Cost is around $4, without shrimp.

 Curried Lentils

  • 1/2 cups lentils
  • 1 1/2 cups water
  • 1/2 onion, cut in half then sliced
  • 2 large potatoes (or 4 small), large dice
  • 1 clove garlic, minced
  • 1/2 inch piece fresh ginger root, grated or minced
  • 2 tablespoons curry powder
  • 1 cup Jasmine rice
  • 1 can (15 oz) coconut milk
  • 1/2 cup fresh or frozen peas
  • pepper to taste
  • Soak lentils overnight as directed on package.

    Place the lentils and fresh water in a medium saucepan over medium heat, and bring to a boil. Stir in onion, potatoes, garlic, ginger, and curry powder. Cover, reduce heat, and simmer for 20 minutes, or until lentils and potatoes are tender.

    While lentils cook, heat 1 cup of water to boiling. Add 1 cup of rice, return to a boil, stir once then cover. Cook rice for 15 minutes. When done, remove lid and fluff rice with a fork.

    Stir in coconut milk and pepper into the lentil mixture. Let simmer for 10 to 15 minutes. Stir in peas and cook until peas are just heated, about 3 minutes.

    Serve lentil mixture over rice.

    Serves 2-3
