Creamy Potato Soup

On the menu tonight was a family favorite (again from my stepmom– thanks, Suzy!), Creamy Potato Soup. Having worked in restaurants much of my adult life, I’ve tried many different potato soups. This one remains my favorite.

While this is a time-consuming recipe, each step is simple. Total cook time approximately 50 minutes. Cost is under $4.

Creamy Potato Soup

1 large onion, diced

3 stalks celery, chopped

2 carrots, chopped

4 large potatoes, cubed

3T parsley, chopped (or 2T dried)

2 tsp salt

1/4 tsp paprika

1 1/2 cups hot water

White sauce

Saute onion in olive oil until tender. Add remaining ingredients except white sauce, and cook until veggies are tender. Add white sauce and stir until blended and heated through.

White Sauce

4 cups milk

2T flour

4T butter

2 vegetable bouillon cubes

1 tsp salt

1/4 tsp pepper

Mix 1/2 cup of milk with the flour. Heat the rest of the milk to boiling. Add flour and stir constantly until thickened. Add remaining ingredients and stir until bouillon cubes dissolve.

Serves 4-6
